Last night I had a dream that I went to the interview that I have today (in about an hour actually) and all we did was sit in the conference room and eat cupcakes. It was the best interview ever! I hope it was a premonition of what’s going to happen today :)

Seattle is still struggling to find summer—it’s rainy one minute, sunny the next. JUST BE SUMMER, ALREADY! Maybe if we all bake the rain into a cake, though, it’ll finally go away. Worth a shot, right? Get the easy instructions here! (I’ve also heard of folks making these for wedding and baby showers, which is a fantastic idea. You people are smart.)

In honor of Boyfriend’s birthday and for the many Memorial Day BBQ’s this weekend, I decided to make some Cookies and Cream cupcakes. These are super tasty and super easy to make, plus everyone is really impressed when they eat them.
What you need:
- One package of white cake mix (and whatever ingredients that requires, which is usually eggs, and vegetable oil).
- 1 cup of coarsely crushed Oreo’s
- 24 Oreo halves
- Frosting (I use a whipped cream cheese frosting)
What to do:
- Preheat oven to 350 degrees and line cupcake tin with paper cups.
- Prepare cake mix according to package directions. Fold in the crushed Oreo bits. Place an Oreo half in the bottom of each paper cup, cream side up.
- Spoon batter (I use an ice cream scoop) into paper cups, filling them about 3/4 of the way.
- Bake according to directions. Cool in pan for 5 minutes. Remove from pan and allow to cool completely.
- Frost cupcakes. Crush about 6-10 more cookies and add crushed bits to the top.
- ENJOY!

Sweet Alyssum is a small, white flower with a sweet smell. My mother always planted them in our front yard, and as a child, I called them Sweet Alyssa, thinking they were named after me. Guess it stuck...
